Our macerated white – with its Sicilian name, Arancino – for an unconventional pairing: sliced tuna in a dried fruit crust. The king of our seas is the protagonist of this second taste with strong characteristics. He will surprise you how Arancino will manage to perfectly support this second course and the idyllic combination that will come from it with the dried fruit crust.
A tribute to the grape variety that most represents our island, Nero d’Avola in its noblest expression, the Cutaja Riserva DOC, could not be missing. Aging in large barrels gives this wine all the characteristics for a strong but impactful combination: larded bacon with Cinisara semi-soft cheese.
The fourth taste provides a breath of international air but with a completely Sicilian nuance, our precious Delia Nivolelli Syrah Riserva DOC combined with a red bowler made with pulled pork, caramelized onion and potato. A complex but elegant combination that will bring you towards the end of this journey.
Last but not least, our late harvest Grillo, Tagos, naturally sweet as it has no added sugar, served with cannolo cheesecake. Amber notes of dried fruit combined with ricotta, the queen of Sicilian cheeses.
